You promised them presents. Delicious, homemade, taste-like-they-just-popped-out-of-the-oven presents.
Thing is, they never popped out of your oven. Because you never had a chance to make them during the holiday frenzy.
But a promise is a promise. So grab a tin of Lacey SueZ. cookie mix. Yes, it's a ready-to-go mix whipped by Sue Zelickson, WCCO personality and foodie-about-town.
The recipe is one she came up with as a little girl. After watching her grandmother cook, she didn't think you actually needed to measure when baking, so her chocolate chip cookies came out flat.... but delicious.
Now these Florentine-like cookies are her signature and she's sharing the the secret "recipe" with the world. (And proceeds are donated go to Perspectives Kids' Cafe in St. Louis Park.)
Just add butter and an egg to the mix, then scoop it out half-a-teaspoon at a time onto a parchment-paper covered cookie sheet. You can keep the extra dough in the fridge for cookies-on-demand, a fine idea since a tin makes about 100.
In just four minutes, you have bubbly golden discs that are paper-thin, candy-like cookies that melt when you eat them.
They're so good, you'll want to hand-deliver these scrumptious babies right to your mouth.
So much for promises.
Lacey SueZ. cookie mix, available at Local D'Lish, Golden Fig, Corazon, Electric Fetus and Grass Roots Gourmet (Midtown Global Market).
